Ingredients

Techniques
  • 1 lb ground pork
  • 2 tbsp chopped up parsley
  • 2 tsp chopped up garlic
  • ½ cup whole wheat breadcrumbs
  • 5 tbsp shaved parmesan cheese
  • 1 tbsp chili powder
  • 1 tbsp oregano
  • 2 tsp chili flakes
  • 1 tbsp chopped up raw garlic
  • 3 cup tomato puree
  • 1 tbsp dry oregano
  • 1 tbsp brown sugar
  • 1 tbsp tomato paste
Put the ground meat in a bowl; add chopped parsley, chopped garlic, breadcrumbs, shaved parmesan, chili powder, oregano and chili flakes.
Choosing the meat
Mix thoroughly so the breadcrumbs and ingredients are absorbed into the meat.
Mixing the meatball ingredients
Form the meatballs: compress the meat between the hands into one solid mass, then loosen the grip as you roll for a smooth ball with no cracks, so they do not fall apart. About an ounce and a half each.
  • olive oil
Heat a large saute pan on high with olive oil; sear the meatballs about 5 minutes until golden brown.
Add chopped raw garlic, shake, then add tomato puree, salt, pepper, dry oregano and brown sugar; finish with tomato paste and a good helping of olive oil.
  • salt
  • pepper
  • olive oil
Stir and reduce on low heat for a solid hour.
  • salt
  • spaghetti pasta
Boil a pot of generously salted water and cook the spaghetti 5 to 7 minutes until al dente.
Strain and coat the pasta with olive oil so the noodles do not stick.
Plating with a twist
  • olive oil
  • freshly grated parmesan cheese
  • basil leaves
Lay the pasta on the plate with a twisting motion for a spiral look; spoon sauce and meatballs over, top with grated parmesan and small basil leaves.
