Ingredients
Method
Techniques
- ¼ cup neutral oil
- ¼ cup chopped garlic
In a non-stick pan on medium heat, cook about 1/4 cup chopped garlic in about 1/4 cup neutral oil, stirring constantly, a couple of minutes until golden brown, not burnt.
- 2 pack rice
Pour into a strainer set over a small pot to stop the cooking and separate the garlic oil from the crispy garlic.
- butter
- salt
- 1 can SPAM
Heat most of the garlic oil, add the day-old rice, flatten it and stir; add a little butter and a pinch of salt, then most of the crispy garlic (keep some for garnish), until heated through.
Making the garlic rice
Level the SPAM, cut slices about a quarter inch thick and score crosshatch marks on both sides.
Fry the slices in the remaining garlic oil, a couple of minutes a side, until golden brown.
- 1 whole egg
In the remaining grease with a little butter, fry an egg sunny side up, about a minute and a half.
A sunny-side-up egg
- green onion
Plate the rice, a slice of SPAM and the egg; top with the reserved crispy garlic and green onion.
