- 6 whole sliced scallions
- 4–5 whole croissants
- 1 whole onion
- olive oil
- 2–3 cloves garlic cloves
Saute the finely chopped onion in a little olive oil until golden; add the grated garlic and warm until fragrant.
Add the sliced scallions and cook until wilted and soft.
- 1 lb baby spinach leaves
Add the baby spinach, raise the heat to high so it wilts and the released liquid evaporates; season with salt, black pepper and the dried dill, mix and turn off the heat.
- salt and black pepper
- 1 tsp dried dill
- ½ stick cream cheese
- feta cheese
- crushed red pepper flakes
Off the heat, stir in the cream cheese until melted, then the crumbled feta and a little crushed red pepper flakes. Taste and adjust salt and pepper.
Slice the croissants in half and set the tops aside. Spread the filling on the bottoms and top with mozzarella.
- mozzarella cheese
Bake in a 350 degree oven about 10 minutes until toasted and the cheese is melted; warm the croissant tops for the last three or four minutes.
