Techniques
Heat the sunflower oil in a large fry pan over medium heat, no higher, so the fritters cook through before they brown.
Heating the oil at medium
- 90 ml sunflower oil
- 60 g all-purpose flour
- 5 g baking powder
- 25 g granulated sugar
- 2½ g ground cinnamon
- 1½ g sea salt
Mix the flour, baking powder, granulated sugar, cinnamon and sea salt in a large bowl.
- 1 whole large egg
- 90 ml milk
Make a well, whisk in the egg, then whisk in the milk to a smooth batter.
- 1 whole Granny Smith apple
Peel the apple, cut the pieces off around the core, roughly chop and add to the batter.
- ½ whole lemon
Grate in the zest of half a lemon, avoiding the white pith, and mix. Add more milk if too thick, more flour if too thin.
Once the oil has heated about 10 minutes, add spoonfuls of batter in a single, evenly spaced layer, in batches; fry about 2 minutes per side until golden.
- granulated sugar
Drain each batch on paper towels, then coat each fritter in granulated sugar in a shallow bowl.
