Techniques
  • 60 ml extra virgin olive oil
Heat a medium fry pan over medium heat with 60 ml of extra virgin olive oil.
  • 2 whole cod fillets
Pat the cod fillets completely dry on paper towels, season with sea salt and black pepper, and coat fully in flour.
  • sea salt
  • freshly cracked black pepper
  • all purpose flour
When the oil is hot but not smoking, fry the cod three to four minutes per side until cooked through and golden; transfer to a wire rack.
  • 5 cloves garlic
  • 225 g white mushrooms
Thinly slice 5 garlic cloves, chop the parsley, and slice the mushrooms a quarter inch thick.
In the same pan over the same heat, stir the garlic continuously about 30 seconds until fragrant, without browning.
Add the mushrooms, raise to medium-high, coat in the oil and saute four to five minutes, stirring every minute or so.
Add 2 tablespoons (8 g) chopped parsley, season with sea salt and black pepper, and mix. Remove from the heat.
  • 8 g fresh parsley
Spoon mushrooms into a serving dish, top with a cod fillet and fresh parsley.
