Techniques
Heat a large fry pan over medium heat with the olive oil.
  • 45 ml extra virgin olive oil
  • 4 cloves garlic
After a couple of minutes add the thinly sliced garlic and mix continuously so it does not brown too quickly and sautes evenly, 3 to 4 minutes until lightly browned.
  • 1 tsp dried rosemary
  • 1¼ g hot smoked Spanish paprika
Add the dried rosemary and hot smoked paprika and mix so they coat the garlic.
  • 120 ml white wine
  • sea salt
  • freshly cracked black pepper
Add the white wine, season with sea salt and black pepper, mix, then simmer without stirring for about four minutes until reduced by half and the alcohol has cooked off.
  • 450 g raw jumbo shrimp
  • sea salt
  • freshly cracked black pepper
Pat the shrimp completely dry on paper towels and season one side with sea salt and black pepper.
Cooking the shrimp
Add the shrimp in a single layer and cook 1 to 2 minutes per side until cooked through.
  • fresh parsley
Off the heat, transfer to a serving dish and top with chopped fresh parsley.
