Techniques
  • 675 g cauliflower
Remove the outer leaves from the cauliflower, quarter it and cut the florets from the stem; cut the larger florets smaller.
Rinse the florets in a colander and pat completely dry on a dish cloth.
Pulse in batches in a food processor a few seconds to small chunks; do not over-chop.
  • 45 ml extra virgin olive oil
  • 6 cloves garlic
Heat a large fry pan on medium with the olive oil; add the chopped garlic, stirring continuously about 1 minute until fragrant, not browned.
  • 4 g sweet smoked Spanish paprika
  • sea salt
  • freshly cracked black pepper
Add the smoked paprika and mix quickly; add the cauliflower and season with sea salt and black pepper.
Saute, stirring every 1 to 2 minutes, 10 to 12 minutes in all.
  • 45 ml extra virgin olive oil
  • eggs
Meanwhile heat the second fry pan on medium with olive oil; crack each egg into a bowl, slide into the hot oil and leave 1 to 2 minutes without moving for a crispy base.
Splash hot oil over the egg a few seconds to cook the whites; remove. Fry the rest the same way.
  • fresh parsley
Plate the cauliflower, top with a fried egg, season with sea salt and pepper and garnish with parsley.
