Techniques
  • 2 cloves garlic
  • sea salt
  • 8 g chopped parsley
Pound two roughly chopped garlic cloves, a pinch of sea salt and the chopped parsley to a paste in a mortar.
Mix in two tablespoons of extra virgin olive oil and set the sauce aside.
  • 30 ml extra virgin olive oil
  • ¼ cup extra virgin olive oil
Heat a quarter cup of extra virgin olive oil in a small to medium fry pan over medium heat.
  • 2 cloves garlic
  • 2 whole eggs
Thinly slice two large garlic cloves; crack two eggs into a small bowl.
When the oil is hot but not smoking, add the garlic and stir continuously about 30 seconds until lightly browned, not more or it turns bitter.
Add the eggs, working the garlic slices in, and fry undisturbed one to two minutes until golden and crusty underneath.
Splash hot oil over the tops for a few seconds without overcooking the yolks.
  • sea salt
  • freshly cracked black pepper
Lift out, shaking off excess oil, into a serving dish; season with sea salt and black pepper and top with the parsley and garlic sauce.
