Heat a large fry pan over medium heat with 35 ml extra virgin olive oil.
Spanish garlic peas with eggs
  • 35 ml extra virgin olive oil
  • 1 whole small onion
  • 6 cloves garlic
Finely chop one small onion and roughly chop 6 garlic cloves; add to the pan and stir continuously so everything sautes evenly, 3 to 4 minutes, until the onion is translucent and the garlic fragrant.
  • 60 ml dry white wine
  • ½ g dried thyme
  • 1 whole bay leaf
Add 60 ml dry white wine, 1/2 tsp dried thyme and a bay leaf; mix and simmer about 3 minutes until the alcohol cooks off and the liquid reduces by half.
  • 1 bag frozen peas
Add a 16 oz bag of frozen peas straight from frozen; mix, then stir every 1 to 2 minutes so the peas cook evenly.
Adding the peas straight from frozen
  • 60 ml extra virgin olive oil
  • 2 whole eggs
Heat a separate fry pan over medium heat with 60 ml extra virgin olive oil. Crack each egg into its own bowl.
Add the eggs to the hot oil and leave them unmoved 1 to 2 minutes until lightly crispy underneath.
  • sea salt
  • freshly cracked black pepper
Splash hot olive oil over the eggs for a few seconds only, so the yolk stays creamy. Remove and season with sea salt and black pepper.
After 6 to 7 minutes the peas should be tender; taste one to check.
Season the peas with sea salt and black pepper only now that they are cooked, and mix.
  • chopped fresh chives
Off the heat, spoon peas into a shallow bowl, top with a fried egg, add more peas round the edges and sprinkle with chopped chives.
