Techniques
  • baguette
Cut the baguette diagonally into slices one inch thick.
  • 60 ml extra virgin olive oil
  • ¼ cup margarine
  • 3 cloves garlic
  • 2 tbsp finely chopped fresh parsley
In a small bowl combine the olive oil, margarine, grated garlic and parsley; whisk to a creamy texture.
Spread the mixture on one side of each slice, lay on a parchment-lined baking tray and season each with sea salt.
  • sea salt
Toast in a preheated oven, top and bottom heat, at 210C (about 410F) for five to six minutes; do not overcook or the garlic turns bitter. Rest out of the oven.
Heat a large fry pan over medium heat. Thinly slice the garlic.
  • 6 cloves garlic
  • 20 whole raw jungle shrimp
  • sea salt
  • freshly cracked black pepper
Pat the shrimp completely dry on paper towels and season one side with sea salt and black pepper.
  • 60 ml extra virgin olive oil
Add the olive oil to the hot pan, then the sliced garlic, stirring continuously about one minute until lightly sauteed.
Add the shrimp in a single layer, starting at the handle and working round in a circle; cook about one minute per side.
  • ½ tsp hot smoked Spanish paprika
Add the paprika and mix to coat.
Paprika and plating
Take off the heat, transfer to a shallow bowl on a large plate and arrange the garlic toast around it.
