Techniques
- 30 ml extra virgin olive oil
- 1 whole onion
- 4 cloves garlic
- 1 whole red bell pepper
- 1 whole carrot
Heat the olive oil in a stock pot over medium, add the chopped onion, garlic, red bell pepper and carrot and stir continuously about 4 minutes until lightly sauteed.
- 15 ml sherry vinegar
- 2½ g sweet smoked Spanish paprika
- 1½ g ground cumin
Add the sherry vinegar, paprika and cumin and mix quickly so the paprika does not turn bitter.
- 120 g tomato sauce
Add the tomato sauce, mix and simmer about 4 minutes until slightly thickened.
- 130 g dried lentils
Rinse the dried lentils in a fine sieve under water.
- 1 l vegetable broth
- 1 whole bay leaf
Add the rinsed lentils, the vegetable broth and the bay leaf, turn to high and mix gently.
Once boiling, cover and lower the heat; simmer 20 to 25 minutes until the lentils are just cooked through, checking the package instructions.
- 440 g canned chickpeas
Drain and rinse the chickpeas, transfer to a large bowl and mash until semi mashed, leaving little chunks.
- 40 g plain breadcrumbs
- 1 whole egg
- 30 g chopped onion
- 1 cloves garlic
- 1 whole carrot
- 8 g chopped parsley
- 1½ g ground cumin
- sea salt
- freshly cracked black pepper
Add breadcrumbs, egg, chopped onion, grated garlic and carrot, parsley and cumin, season with salt and pepper and mix, then press the mixture into a paste so it binds.
Squeeze a spoonful at a time in your hands and shape into balls about the size of a golf ball.
- 45 ml extra virgin olive oil
Heat the olive oil in a large fry pan over medium, add the meatballs in a single layer and fry 8 to 10 minutes until golden all around, then set aside.
- sea salt
- freshly cracked black pepper
Season the cooked stew with sea salt and black pepper and mix gently; beans are seasoned only after cooking.
- fresh parsley
Add the veggie meatballs to the pot, cover and simmer another 2 to 3 minutes until heated through, then garnish with fresh parsley.
