Aromatics, herbs and the manchego
Season with sea salt and black pepper and mix well.
  • sea salt
  • freshly cracked black pepper
  • 240 g cheese
Finely shred the cheese, add it to the batter and mix again. Thin with more liquid or thicken with more flour if needed.
  • 60 ml extra virgin olive oil
Heat a large fry pan over medium heat with the extra virgin olive oil.
After a couple of minutes add spoonfuls of batter in a single layer, evenly spaced, in batches so the pan is not crowded, and fry 3 to 4 minutes per side until golden all around.
  • 120 g mayonnaise
Drain each batch on paper towels.
  • 2 cloves garlic
  • 2½ g hot smoked Spanish paprika
  • 5 ml lemon juice
For the alioli, whisk the mayonnaise with grated garlic, hot smoked paprika, lemon juice, extra virgin olive oil, sea salt and black pepper to a creamy sauce.
  • 15 ml extra virgin olive oil
  • sea salt
  • freshly cracked black pepper
Transfer the alioli to a serving dish and arrange the fritters around it.
