Techniques
Put 60 g of flour in a large bowl and make a well in the middle.
  • 60 g all-purpose flour
  • 1 whole egg
  • 120 ml beer
Crack the egg into the well and whisk it until well mixed.
Add 120 ml of beer and mix to a creamy batter.
  • 2 whole onions
  • 2 cloves garlic
Finely chop the onions into the batter and grate in two cloves of garlic.
  • 8 g chopped fresh parsley
  • 1¼ g sweet smoked Spanish paprika
  • ½ g dried thyme
Add the parsley, smoked paprika, dried thyme, sea salt and black pepper and mix.
  • sea salt
  • black pepper
  • 120 g cheese
Finely grate in the cheese and give it a final mix; add more liquid if the batter is too thick, more flour if too thin.
Heat a large fry pan over medium heat, no higher, or the fritters brown outside before the inside cooks.
  • 120 ml extra virgin olive oil
Add 120 ml of extra virgin olive oil and heat until hot but not smoking.
Spoon the batter in in a single evenly spaced layer, in batches so the pan is not crowded.
Fry two to three minutes per side until golden all around, then drain on paper towels.
  • 120 g mayonnaise
  • 1 cloves garlic
  • 5 ml fresh lemon juice
  • 15 ml extra virgin olive oil
  • 4 g chopped parsley
  • sea salt
  • black pepper
For the alioli, whisk the mayonnaise with the grated garlic, lemon juice, olive oil, parsley, sea salt and black pepper to a creamy texture.
Spoon the alioli onto a serving plate and arrange the fritters around it.
