Ingredients

Techniques
  • 45 ml extra virgin olive oil
Heat a large fry pan over medium heat with 45 ml of extra virgin olive oil.
  • 1 whole onion
  • 6 cloves garlic
Finely chop the onion, roughly chop the garlic and finely chop the red bell pepper.
  • 1 whole red bell pepper
Add the chopped vegetables to the hot pan and mix continuously so everything is coated in the oil and sautes evenly, about 5 minutes, until lightly sauteed and the onions are translucent.
  • 15 ml sherry vinegar
  • 5 g sweet smoked Spanish paprika
  • 2 g ground cumin
Add the sherry vinegar, then the smoked paprika and ground cumin, and mix quickly -- paprika turns bitter if it sits in a hot pan.
Vinegar, paprika and cumin
  • 120 g tomato sauce
  • sea salt
  • black pepper
Add the tomato sauce, season with sea salt and freshly cracked black pepper, turn the heat to high, mix and simmer about 4 minutes until slightly thickened.
  • 1 jar haricot beans
Drain the jar of haricot beans into a colander and rinse under water.
  • 480 ml vegetable broth
  • 1 whole bay leaf
Add the drained beans, the vegetable broth and the bay leaf, mix gently and bring to a boil.
Lid on, lower to a low-medium heat and simmer 10 to 15 minutes so the flavours develop.
  • parsley
Off the heat, transfer to a shallow bowl and top with chopped parsley.
