Heat the vegetable broth with the bay leaf in a saucepan over medium heat.
Warming the broth and oil
  • 1 whole bay leaf
  • 45 ml extra virgin olive oil
Heat a large fry pan over medium heat with the extra virgin olive oil.
  • 1 whole onion
  • 6 cloves garlic
Finely chop the onion and roughly chop the garlic; add to the hot oil and stir continuously to sauté 3-4 minutes, until the onion is slightly translucent.
  • 95 g Spanish short grain rice
Add the rice and fry, stirring continuously, about 2 minutes.
  • 5 g sweet smoked Spanish paprika
Add the paprika and mix in quickly so it does not turn bitter.
  • 120 g tomato sauce
  • sea salt
  • freshly cracked black pepper
Add the tomato sauce, season with sea salt and black pepper, mix and simmer about 5 minutes until thickened.
  • 2 can pinto beans
Drain the beans in a colander and rinse under water.
Add the beans, pour in the simmering broth and mix.
Simmer about 18 minutes, until the rice is just cooked through, stirring every 2-3 minutes to release the starch for a slightly creamy texture.
  • Spanish guindilla peppers
Take off the heat, serve in shallow bowls and garnish with guindilla peppers.
