  • 2 whole yellow onions
  • 1 whole red bell pepper
  • 1 whole green bell pepper
Roughly chop the onions; cut the bell peppers into small bite-sized pieces.
  • 1 head garlic
Separate the garlic cloves and cut a slit in each, leaving the skins on.
  • 60 ml extra virgin olive oil
Heat a large frying pan over medium heat with the olive oil, a couple of minutes until hot.
Add the vegetables and garlic cloves, coat in the oil and saute 10 to 12 minutes, stirring every 1 to 2 minutes, until the onions are translucent and the peppers slightly tender.
  • 2 cloves garlic
  • 5 g chopped parsley
  • sea salt
Pound the chopped garlic, parsley and a pinch of sea salt in a mortar to a paste. Mix in the tablespoon of olive oil.

  • 60 ml extra virgin olive oil
Heat the same pan over medium heat with the quarter cup of olive oil, a couple of minutes.
Add the eggs in a single layer, evenly spaced; season with sea salt and black pepper.
Fry 1 to 2 minutes without moving them, for a light crispy underside, then splash hot oil over them for a few seconds only.
Set the eggs over the vegetables and top with the garlic and parsley sauce.
