- 2 can canned sardines in olive oil
Gently drain two cans of sardines in olive oil into a fine sieve over a bowl, keeping the oil.
- 6 cloves garlic
- ¼ cup drained olive oil from the sardines
Heat a fry pan over medium heat with the drained sardine oil, a generous quarter cup.
- all-purpose flour
Gently coat each sardine evenly in all-purpose flour in a shallow bowl.
Flouring the sardines
Fry the sardines in a single, evenly spaced layer 2 minutes per side until lightly golden; remove and set aside.
- ¼ tsp crushed red pepper
In the same pan, sauté the sliced garlic with a quarter teaspoon of crushed red pepper, stirring, 1 to 2 minutes until lightly browned, without browning too much or it turns bitter; turn off the heat.
- 1¼ g sweet smoked Spanish paprika
- 10 ml fresh lemon juice
- sea salt
- freshly cracked black pepper
Stir in half a teaspoon of sweet smoked paprika, 2 teaspoons of lemon juice, sea salt and black pepper.
- chopped parsley
Arrange the sardines in a single layer on a plate, spoon over the sauce, and sprinkle with chopped parsley.
