Techniques
- 60 ml extra virgin olive oil
Heat the olive oil in a stock pot over medium heat.
- 2 slices baguette
- 6 cloves garlic
Cut two one-inch slices from a baguette and peel six cloves of garlic.
Fry the bread and garlic three to four minutes until golden all around, then lift them out and turn off the heat.
- 700 g jarred cooked white beans
- 1 whole onion
Drain and rinse the white beans in a colander; finely chop the onion.
- 2½ g sweet smoked Spanish paprika
- 1 g dried oregano
- 1½ g ground cumin
- ¼ tsp crushed red pepper
- sea salt
- black pepper
Pound the fried garlic in a mortar with the paprika, oregano, cumin, crushed red pepper, salt and black pepper until well mashed.
- 15 ml white wine vinegar
- 60 ml water
Mix in the white wine vinegar and the water to loosen the adobo.
Reheat the pot over medium, adding more oil if needed, and cook the chopped onion four to five minutes until slightly translucent.
- 480 ml vegetable broth
Add the rinsed beans and the vegetable broth, season with salt and pepper, raise to high and bring to a boil.
Cover, lower the heat and simmer about 10 minutes, shaking the pot now and then to thicken the broth.
