Ingredients
Method
Techniques
  • heritage stone ground flour
Build a wood fire to cook everything over.
Building the fire
Mix a spaetzle batter from the stone ground spelt flour; the high-protein flour develops gluten quickly.
  • water
Let the batter rest; bring water to a boil.
  • butter
  • flour
  • milk
Start a bechamel: melt butter, add about equal parts flour, then add the milk.
Making the bechamel over the grill
Wet a board, spread a line of dough on it and cut it into the boiling water; the spaetzle are done when they float.
Repeat until there is enough spaetzle to fill the skillet.
  • Gruyere
Combine spaetzle, bechamel and Gruyere and stir until smooth.
Bringing in the Gruyere and curds
  • cheese curds
Add the cheese curds at the end so they melt into stretchy pockets; fold together until bubbly.
