Ingredients
Method
Techniques
  • 400 g frozen edamame in the pod
  • 1 whole cinnamon stick
  • 2 whole bay leaves
  • 1 whole star anise
  • 1 tsp Sichuan peppercorns
  • 4 whole diced hot chilies
  • water
Bring a big pot of water to a boil, add the frozen edamame in the pod, return to a boil and simmer a couple of minutes (about 8 minutes for fresh). Lift out and cool.
Heat 2 tbsp vegetable oil with the cinnamon stick, bay leaves, star anise and Sichuan peppercorns over low heat for a minute or two.
Spicy garlic sauce
  • 2 tbsp vegetable oil
  • ¼ cup minced garlic
Add 1/4 cup minced garlic and the diced chilies (optional); stir until fragrant.
  • ⅓ cup water
  • ⅓ cup soy sauce
  • 3 tbsp Chinese black vinegar
Add 1/3 cup water, bring to a simmer, then turn off the heat. Season with 1/3 cup soy sauce and 3 tbsp Chinese black vinegar, which also cools the sauce.
Pour over the edamame and toss. Refrigerate overnight, tossing now and then for an even marinade; serve cold.
