Ingredients
Method
Techniques
- 6 oz hearts of romaine and little gem lettuce
Stack the lettuce leaves, roll them up a little and slice across into one-inch strips; set aside in a bowl.
- vegetable oil
- shallots
- green onions
- garlic
Heat the oil over medium-high, add the sliced shallots, green onions and minced garlic, and cook stirring a minute or two until the shallots turn translucent.
- brown sugar
- rice vinegar
- 1–3 tbsp Asian fish sauce
- soy
- sambal
- tamarind paste
- sriracha hot sauce
Add the brown sugar, rice vinegar, fish sauce, a touch of soy, sambal, tamarind paste and sriracha; mix, turn off the heat and set aside.
Building the spicy sauce
- thin spaghetti
- salted water
Boil the noodles in salted water about 30 seconds less than usual, since they finish in the sauce.
Transfer the noodles with tongs into the sauce, letting some water come along; cook over medium-high, stirring, about 30 seconds.
Pour into the bowl of lettuce and toss until the lettuce slightly softens and is coated, about a minute (a few seconds for crisper, up to five minutes for wilted).
Tossing with the lettuce
- lime
- hot sauce
- cilantro leaves
Serve with a big piece of lime to squeeze over, a little more hot sauce, and snipped cilantro.
