Ingredients
Method
Techniques
  • 5 strips bacon
Cook the bacon strips in a hot pan a couple of minutes until a little crispy but still a little soft; lift out, leaving the grease in.
  • ½ whole yellow onion
Cook the diced onion in the bacon grease about five minutes until starting to turn translucent.
  • ½ lb mushrooms
Add the sliced mushrooms, toss to coat, and soften four or five minutes.
  • butter
  • ½ tbsp garlic paste
Add a knob of butter and the garlic paste; cook until fragrant, then spread on a sheet pan to cool.
  • 1 pack cream cheese
  • 2 tbsp soft butter
Cream the softened cream cheese with the soft butter.
  • 10 oz defrosted spinach
  • 4 whole eggs
Mix in the bacon, the squeezed spinach, the beaten eggs and the mushrooms and onions, breaking up the cream cheese clumps.
  • 8 oz shredded Monterey Jack
Mix in the shredded Monterey Jack.
  • kosher salt
  • pepper
  • 1 tsp red pepper flakes
Season with kosher salt and pepper and add the red pepper flakes.
Spread into a nine-inch tart pan with a removable bottom (or a nine-inch pie plate); an eight-inch would be too small, as it puffs.
Bake at 350 degrees for 45 minutes.
  • butter
  • French fried onions
Melt butter in a pan, toss the French fried onions in it and toast about two minutes; take off the heat and cool in a separate pan.
Buttered crispy onion topping
  • Parmesan
Toss the cooled onions with a little Parmesan.
Parmesan and the reveal
Remove the tart ring, cut a wedge and top each serving with the crispy onions.
