- 226 g unsalted soft butter
- 150 g granulated sugar
- ½ tsp salt
Mix the soft butter, then add the sugar and salt and beat until combined, light and fluffy; scrape down the bowl.
- 1 whole egg
- 1 tsp vanilla
- 1 tsp almond extract
Add the egg, vanilla and almond extract and mix until the broken mixture comes together, uniform with no streaks.

Optionally add food coloring, a drop or two, before the flour.

- 2⅓ cup all-purpose flour
Scrape down the bowl, add the flour and mix to a soft dough.

Load the cookie press and press directly onto an unlined sheet tray, pressing down to make contact and giving one pump; keep the press clean of residual dough.
