Ingredients
Method
Techniques
  • 1 lb green beans
  • 6–8 whole red dried chilies
  • 2 tbsp oil
  • 3 cloves diced garlic
  • 1 tsp ginger
Split the green beans open so they cook faster and the seasoning infuses; use a green bean splitting tool or a knife.
Cut the dried red chilies open and discard the seeds.
Chilies and the sauce
  • 1 tbsp soy sauce
  • 1 tbsp soybean paste
  • ½ tbsp oyster sauce
  • 3 tbsp water
Mix the sauce: soy sauce, soybean paste, oyster sauce and water.
Over medium heat add oil and, without waiting for it to heat, add the chilies, diced garlic and ginger; stir about a minute until fragrant.
Add the green beans and mix a couple of minutes.
Turn to medium-low, pour in the sauce and cook a few minutes until the beans are soft and pliable; turn off the heat.
