Mixing the batter and adjusting the colour
- butter
- 1 tbsp flour
Butter three 6-inch pans and coat with a tablespoon of flour, tapping out the excess; divide the batter evenly by weight on a kitchen scale.
Wrap the pans in cake strips for an even, flat bake and bake at 340 for about half an hour, until the centres are springy and the edges pull away from the pan.
- 2 stick unsalted butter
- salt
- 1 lb confectioners' sugar
- lemon juice
- 1 tbsp strained strawberry juice
Buttercream: beat the room-temperature unsalted butter with a pinch of salt in a stand mixer with the paddle; add about a pound of confectioners sugar, cover with a tea towel and mix on low. Scrape down and add a couple squeezes of lemon juice and a tablespoon of strained strawberry juice.
Strawberry American buttercream
Unmould the layers. Stack with buttercream between them, then apply a paper-thin crumb coat.
Unmoulding, stacking and the crumb coat
Pipe on the final layer of buttercream and smooth with an offset spatula, pulling in while turning for a straight corner; dip tools in very hot water and wipe if smoothing is difficult.
Decorate: back rose petals in pale pink buttercream with a palette knife, stamens in yellow from a snipped piping bag, front petals with a 61 tip, stems in pale green, buds in pale pink and peach, and leaves with a 349 tip.
