- graham crackers
Bash the graham crackers with a rolling pin into a coarse crumble; a uniform fine texture is not wanted and bigger pieces are fine.
Bashing graham crackers for a crumble
- 1 tbsp sugar
- kosher salt
Transfer to a bowl and mix in about a tablespoon of sugar and a pinch of kosher salt; the sugar acts as a binder as it bakes.
Binding the crumble with sugar and butter
- 3 tbsp butter
Melt four tablespoons of butter and drizzle in about three, stirring until the mixture looks like wet sand and holds together when squeezed.
- macerated strawberries
Spread on a rimmed baking sheet, not too thin, and bake until golden brown and very fragrant; it crisps as it cools.
- 4 oz mascarpone
- heavy cream
- 2 tbsp powdered sugar
- salt
Whip the mascarpone with a splash of heavy cream, about two tablespoons of powdered sugar and a little pinch of salt to a frosting-like texture.
Once the crumble is cool, layer it in the bottom of the glasses, scoop over the whipped mascarpone and top with the macerated berries.
