Techniques
  • pork
Cut the pork into bite-sized pieces and grind it finely in a food processor, or buy ground pork.
  • ¼ tsp salt
  • ¼ tsp ground white pepper
  • 2 tsp Chinese cooking wine
  • 2 tsp minced garlic
  • ¼ cup diced scallions
Season the pork with salt, ground white pepper, Chinese cooking wine, minced garlic and diced scallions; mix until well combined.
Grab the filling and throw it against the mixing bowl with force for 3 to 4 minutes until it becomes sticky and gluey; set aside.
  • 1 whole bitter melon
Discard both ends of the bitter melon, cut it into two cylinders and carefully remove the white spongy part with a dining knife.
  • 1 tbsp cornstarch
Add about a tablespoon of cornstarch into each tube, cover both openings and shake to coat the inner surface so the meat does not fall out.
Hollowing, dusting and stuffing the rings
  • ground sausage meat
Cut the tubes into rings two thirds of an inch thick and stuff them with the meat; overstuffing is fine.
  • 1½ tsp soy sauce
  • 1½ tsp oyster sauce
  • ½ tsp dark soy sauce
  • ¼ tsp five spice powder
  • ¼ cup water
Mix soy sauce, oyster sauce, dark soy sauce, five spice powder and water; set aside.
Preheat the wok over medium heat for about 30 seconds, add a big drizzle of oil and swirl.
  • oil
Add the stuffed bitter melon and pan sear the meat one minute, then flip and sear the other side one minute.
Pour in the sauce, turn the heat to low and simmer 3 to 4 minutes so the flavour infuses, stirring gently.
Plate and drizzle the sauce over.
