  • ketchup
  • Dijon
  • Worcestershire
  • hot honey
  • garlic powder
  • smoked paprika
  • chili flake
  • salt
  • ground pepper
Make the maxi sauce: mix mayo, a little ketchup, Dijon, Worcestershire, hot honey, garlic powder, smoked paprika, chili flake, a pinch of salt and plenty of ground pepper.
Mixing the maxi sauce
  • American cheese
Slice the American cheese very thin and have it all ready in advance.
  • 4 portions ground beef
Weigh four 1.5-ounce portions of ground beef.
Weighing and pressing the patties
  • oil
Oil two pieces of parchment with a couple of drops of oil, edge to edge; set a ball of beef about a third of the way from the top in a tortilla press, cover and press flat. Repeat for all four.
  • bun
  • mayo
Toast the bun on the flat top with mayo spread on it.
Toasting the bun
Lay the patties on the flat top, season quickly and flip; they take about a minute total.
  • water
Top with cheese and stack; add water so the bottom cheese melts, about ten seconds.
Spread maxi sauce on the bun, add the four stacked patties and the lid.
Building the burger
To prep ahead, smash the patties and refrigerate until cooking.
