Ingredients

Techniques
  • ½ tsp freshly ground pepper
  • 1.2 lb chicken wings
Make sure the wings are clean and dry.
  • 1½ tbsp homemade garlic chili sauce
  • ½ tsp salt
  • vegetable oil
Marinate with the garlic chili sauce, salt, pepper and a little vegetable oil, which also makes the skin crispier; toss and rest at least 1 hour, or overnight.
Add the flour and mix until all the wings are nicely coated (or shake in a big bag). Place in a baking pan.
  • 1 cup plain flour
Bake on the middle level of a hot oven at 400 degrees for 30 minutes.
Turn the wings over and bake another 20 to 30 minutes; a roasting rack underneath lets the liquid drip down so the underside comes out better.
  • 1½ tbsp homemade garlic chilli sauce
  • ¼ cup honey
  • 1½ tbsp lemon juice
For the sauce, combine the garlic chili sauce, honey, lemon juice, hoisin sauce and soy sauce.
Cooking the sweet and sour sauce
  • 1½ tbsp hoisin sauce
  • 1 tsp soy sauce
Cook on the stove over medium heat, stirring constantly so it does not stick.
Once bubbling, turn to low and cook a few minutes, stirring, until sticky but still flowing: too watery and it softens the crispy skin, too sticky and it will not coat the wings.
Transfer the wings to a large bowl, pour in the sauce and mix until all are coated.
