Techniques
- 5 lb pork shoulder
Cut the pork shoulder into thin steak slices and tenderize each one until thin and even.
- oil
- 5 whole New Mexico chile pods
- 1 whole chile ancho
Heat oil in a frying pan over medium heat and lightly fry the five New Mexico chiles and the ancho, a couple of seconds a side, until softened but not burnt, which would make the adobo bitter.
- ¼ whole onion
- 3 cloves garlic cloves
Fry the quarter onion and three garlic cloves until softened, then add them to the blender cup with the chiles.
- 2 oz achiote paste
- 1 whole bay leaf
- 5 tsp salt
- 1 tsp brown sugar
- 2 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- ½ tsp ground cumin
- ½ tsp ginger
- ¼ tsp ground cloves
- 2 tbsp oil
- 2 tbsp white vinegar
- 4 slices pineapple
- 6 tbsp pineapple juice
Add the achiote paste, bay leaf, salt, brown sugar, black pepper, onion powder, garlic powder, oregano, cumin, ginger, cloves, oil, white vinegar, four slices of pineapple and six tablespoons of its juice.
Rub the adobo onto both sides of each steak so they are all coated, or pour it over.
- fresh pineapple
Add fresh pineapple, cover with plastic wrap and marinate in the refrigerator overnight or at least six hours.
Take the meat out of the fridge an hour before cooking and preheat the oven to 300F.

- pineapple and chile de arbol salsa
- onion
- cilantro
