  • soba noodles
Preheat the oven to 400 and bring a pot of water to the boil for the noodles.
  • 1 lb firm tofu
Pat the tofu dry and slice into cubes.
Spread the tofu on a parchment-lined tray, season with salt and pepper and bake 45 to 50 minutes.
Cook the noodles to the package instructions, stirring occasionally so they do not stick.
  • salt
  • pepper
  • 30 g carrot
Chop about 30 g of carrot into thin matchsticks.
Rinse and drain the cooked noodles in cold water to get rid of the excess starch.
  • toasted sesame oil
Add a splash of toasted sesame oil, toss gently and set aside.
  • 40 g red bell pepper
  • 2 whole green onion
Slice the red bell pepper thinly, chop the green onion and transfer the vegetables to the noodles.
  • 4 g Thai basil
  • 4 g fresh mint
  • 10 g chopped cilantro
  • ½ cup edamame
  • 2 tbsp peanut butter
  • 1½ tbsp soy sauce
  • 1 tbsp tamarind paste
  • 2 tbsp coconut milk
  • 1 tbsp maple syrup
  • ginger
Whisk the Thai basil, mint, cilantro, edamame, peanut butter, soy sauce, tamarind paste, coconut milk, maple syrup and grated ginger into a dressing.
Pour the dressing over the salad, toss and plate.
Toast a quarter cup of peanuts in a frying pan over medium heat three to four minutes.
  • ¼ cup peanuts
Top the salad with the peanuts and the crispy tofu.
