Ingredients
Method
Techniques
- ¼ cup mirin
- ¼ cup sake
- ¼ cup low-sodium soy sauce
- 2–4 tbsp brown sugar
- ½ tsp ground ginger
- garlic powder
- chili flakes
Mix the mirin, sake, soy sauce, brown sugar, ground ginger, garlic powder and chili flakes in a measuring cup until combined; set aside.
Mixing the teriyaki sauce
- 2 lb chicken thigh
- salt
- black pepper
- corn starch
Season the trimmed chicken thighs with salt and black pepper and coat both sides completely in corn starch.
- oil
Heat a little oil in a pan over medium-high heat and add the chicken without overcrowding; cook 4 to 5 minutes per side.
- water
Set the chicken aside and carefully deglaze the pan with water to clean it up.
Reduce the heat to medium, stir the sauce and pour it in; cook 5 minutes, stirring constantly so it does not burn, until reduced and thickened.
Return the chicken to the sauce and cook another 2 minutes.
