Techniques
  • 1 cup water
  • ¼ cup brown sugar
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 1 tbsp garlic in the squeeze form
  • 1 tbsp ginger
Heat a pan and add the water, brown sugar, soy sauce, honey, garlic and ginger; bring to a simmer, whisking to combine.
  • 2 tbsp cornstarch
  • ¼ cup water
Mix the cornstarch with the quarter cup of water until smooth and not clumpy; pour into the sauce and stir. In about a minute it simmers again and thickens.
Simmer a couple of minutes more, then turn off the heat until needed.
  • 1 lb ground beef
  • 2 whole green onions
  • BFF seasoning
  • 1 tbsp soy paste
Chop the green onions, cutting lengthwise first, and add to the ground beef with the seasoning and soy paste; mix with gloves.
Form third-of-a-pound patties on a tray; not smash burgers.
  • 1 whole golden pineapple
Twist the top off the pineapple, cut about an inch off the top and bottom, cut the skin off down the sides, trim the points, slice into rings and cut out the core with a cookie cutter.
Grill the pineapple slices first, about a minute's head start, since they take time to colour.
Add the patties to the grill and flip as they cook; a little puddle of juices on top says they are ready to flip. Push everything aside to deal with a flare-up.
Warm the teriyaki sauce and coat the patties only once they are already cooking, since a sweet sauce burns; move to the cooking zone and shut the lid.
Take the patties off upside down and paint again with teriyaki sauce; toast the buns on the grill.
