Techniques
  • 1 cup water
  • 226 g butter
  • ¼ cup cocoa powder
Put the water, butter and cocoa powder in a medium pot over medium heat and bring to a boil, then take it off the heat.
  • 240 g flour
  • 400 g granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
Whisk the flour, granulated sugar, baking soda and salt together in a large bowl until combined and free of lumps.
  • 120 g sour cream
  • 2 whole eggs
Whisk the sour cream and the eggs together in a smaller bowl.
  • butter
Butter a half sheet pan.
Greasing the half sheet pan
Beat the sour cream mixture into the flour mixture with an electric hand mixer, increasing to medium speed, to a thick batter.
Add the warm chocolate mixture while mixing on low until smooth, then fold the bottom up to the top with a spatula.
Heating the water and butter with the cocoa powder blooms the cocoa and gives an intense chocolate flavour.
Pour into the sheet pan and nudge it to the corners; it levels out on its own.
  • ½ cup unsalted butter
Bake at 350F for 15 to 18 minutes, until a skewer in the middle comes out with just a couple of crumbs.
  • 2 tbsp unsalted butter
  • 120 ml whole milk
  • 25 g cocoa powder
For the frosting, bring the unsalted butter, whole milk and cocoa powder to a boil in a medium pan over medium heat.
  • 1 cup pecans (optional)
Finely chop about a cup of pecans.
  • 4 cups powdered sugar
Whisk four cups of powdered sugar into the warm cocoa butter mixture a cup at a time until smooth and bound together.
Stir in the pecans.
Frosting the warm cake
Pour the frosting over the warm cake and pull it to the edges with an offset spatula.
Cool completely before slicing.
