Techniques
- mayonnaise
Heat mayonnaise in a pan, stirring constantly so it does not scorch, until the egg solids separate, curdle and deep fry in their own mess.
Strain the solids out; what remains is the original oil used to make the mayonnaise, a clarified mayonnaise suitable as a deep frying medium. Render enough for a deep fry.
- bread
- mayonnaise
- 4 slices American cheese
- tuna salad
Spread mayonnaise on the bread as glue, lay on four slices of American cheese, then the tuna salad.
Building the first tuna melt
Press down firmly and make the tuna flush with the sides so the batter has a uniform surface to adhere to.
- 3 cup all-purpose flour
- 1½ tsp kosher salt
- 4 tsp baking powder
- ¼ cup confectioners' sugar
- ¼ tsp cinnamon
Whisk the flour, kosher salt, baking powder, confectioners' sugar and cinnamon to combine.
- 2 cup whole milk
- 4 whole large eggs
In a separate bowl whisk the whole milk and eggs until homogenous with no streaks of egg.
Add the wets to the dries with the vanilla and whisk until just combined, pancake batter rules: no dry patches, lumps remain.
- 2 tsp vanilla extract
- oil
- powdered sugar
Drizzle the batter into 350F oil in a thin stream, moving in circles. Fry five to seven minutes, flipping occasionally, then dust with sifted powdered sugar.
Coat all sides of the chilled tuna melt in the funnel cake batter.
Heat the clarified mayonnaise to 350F, lower the battered sandwich in and fry five to seven minutes, flipping occasionally, holding 325 to 350F so the thick contents heat evenly.
Variation, a slightly more visually accurate coagulator: sandwich a tuna melt between two funnel cakes, put it in the oven to melt the cheese and warm the tuna, and dust with powdered sugar.
