Ingredients
Method
Techniques
  • cake flour
Press thick layers of aluminium foil firmly onto each facet of the plastic chocolate-bar molds to make a heatproof foil mold; patch holes with more foil.
Making foil molds of the molds
  • sugar
  • 4 oz butter
  • 2 whole egg whites
Melt the butter and let it cool.
Mixing the wafer batter
  • 2 tbsp water
  • water
  • vanilla extract
Add the melted butter, egg whites and a couple of tablespoons of water to the dry ingredients (cake flour, sugar), then vanilla extract and more water until it is like a pancake batter, not thin and not too thick.
  • baking powder
Cook the wafer on the stovetop first so it heats immediately and puffs from the baking powder, then before it browns and sets, cut out the stencil on a cutting board, place on the mold and dry in a low oven preheated to 250, to dehydrate without colour.
The two-step stovetop and oven plan
Heat a grill press on the pan at the lower end of medium; pipe a length of batter and press to cook both sides. Grease the press and pan with butter first.
  • butter
Cook hotter (medium) and thinner; thinner, softer wafer is more flexible for cutting and shaping.
  • oil
Oil the inside of the polycarbonate mold with a brush, lay the inner strip in, paint batter along the top rim and bake until dry and crisp; the mold rated to 130 Celsius ('266').
