Techniques
  • 1 whole large whole egg
  • white sugar
  • vanilla
  • 2 tbsp freshly brewed espresso
In a baking dish, whisk one large egg with white sugar, a little vanilla and a couple tablespoons of espresso into a coffee custard.
  • 2 pieces stale Italian bread
Add two pieces of stale Italian bread, ¾ to an inch thick, and turn until fully saturated, about 10 to 15 minutes on the counter, or more slowly in the fridge.
  • butter
Transfer to a generously buttered foil-lined pan and drizzle any leftover coffee mixture over the top.
Bake in the center of a 375 degree oven about 20 to 25 minutes, until it springs back when poked and is a little crusty at the bottom and sides.
Cool completely on a rack.
  • 3 tbsp marsala wine
  • 1 tbsp sugar
Heat about three tablespoons of marsala with a tablespoon of sugar over medium, swirling, and reduce to about a tablespoon; stop early rather than burn it. Cool.
  • ½ cup mascarpone cheese
  • salt
In a mixing bowl, stir about half a cup of mascarpone with a tiny pinch of salt and the cooled marsala reduction, mixing as little as possible so it does not separate.
Mascarpone without separating
Wrap and chill until cold and firm, then pipe onto the toast, or spread with a knife or spoon.
  • dark chocolate
Grate dark chocolate over the top.
