Techniques
  • 1–2 tbsp fresh mint
  • 2–3 tbsp olive oil
  • 1 lb ricotta cheese
  • 1 lb feta
Combine 1 lb ricotta with 1 lb feta, crumbled.
Making the tiropita filling
  • freshly cracked black pepper
Add finely chopped fresh mint, a drizzle of olive oil and freshly cracked black pepper. Mix and taste; no salt needed because feta is salty.
  • 4 whole store-bought croissants
Slice the croissants in half and set on a parchment-lined baking tray.
  • munster cheese slices
Top each bottom half with the filling, then a half slice of munster cheese, then the croissant top.
Bake in a preheated oven at 350 for 10 to 12 minutes, until toasted and the filling is melted and oozing.
  • honey
Let settle about 5 minutes before serving; serve plain, with harissa, pizza or marinara sauce on the side, or drizzled with honey.
