Techniques
  • 1½ lb whole milk ricotta cheese
  • 70 g shredded Parmesan cheese
  • 2 whole eggs
  • 1 lb feta cheese
In a large bowl combine the ricotta and Parmesan; whisk the eggs with a fork at the side of the bowl and add the feta.
  • 2–3 tbsp olive oil
  • freshly cracked black pepper
  • 1 tsp dried mint
Add the olive oil, black pepper and dried mint; mix until combined and set aside.
Line quarter sheet pans with parchment paper.
Quarter sheet pans and the filo
  • 1 lb number four filo pastry
Cut the thawed filo into three equal 4-inch portions; unwrap one portion at a time so it does not dry out.
  • ½ lb salted butter
Layer two sheets of filo, drizzling melted butter between layers.
Put a heaping tablespoon of filling at the bottom and roll up into a triangle; repeat until filling or filo runs out. Stuck sheets can be left together.
Place on the trays and brush generously with more butter.
To freeze: chill trays about 10 minutes until the butter sets, wrap in plastic wrap, label; keeps about three months.
Bake at 350F for 30 to 45 minutes until golden and crisp.
  • honey
Serve at room temperature as a savory appetizer, or hot drizzled with honey.
