Techniques
  • firm tofu
  • 10–12 whole cashews
Discard the packing water, wash the tofu in fresh water and sit it on paper towels 5 to 10 minutes to lose excess moisture.
Cut the tofu into cubes, not too small or they will break when fried.
  • ½ tsp salt
  • ½ tsp chili powder
  • ½ tsp oil
  • ½ tsp black pepper powder
Toss the tofu with the salt, chili powder, oil and black pepper powder, shake the bowl to coat, and marinate 15 to 20 minutes; paneer does not need this.
  • 3 tbsp oil
Heat three tablespoons of oil in a non-stick pan and add the roughly chopped onion, ginger and garlic.
Stir, add the chopped tomatoes, stir again, then add the soaked cashews.
  • chopped onion
  • chopped ginger
  • chopped garlic
  • chopped tomatoes
  • 1 cup water
Add a cup of water and simmer on medium heat 5 to 7 minutes.
Turn it out into a bowl and let it cool completely.
Blend to a fine paste; pass it through a strainer for a smoother gravy if it is not well blended.
  • 3 tbsp oil
Heat three tablespoons of oil in the same pan on medium to high and lay in the tofu pieces one by one; paneer does not need frying.
Fry about two minutes on one side on medium heat, turn each piece and fry two minutes more, until golden brown, then lift out.
  • cinnamon stick
  • cardamoms
  • cloves
Grind the cinnamon stick, cardamoms and cloves to a fine powder in a spice grinder.
  • ½ tsp store-bought garam masala powder (optional)
  • 2 tbsp oil
  • 2 tbsp butter
In the same pan heat the oil and butter, or four tablespoons of oil if not using butter.
  • 4 tbsp oil (optional)
  • 2 tbsp water
Add the blended tomato mixture and stir about a minute, rinsing the blender jar with two tablespoons of water into the pan.
Cooking the masala gravy
  • 2 tsp Kashmiri red chili powder
  • 1 tsp salt
  • 1 tsp sugar
Add the Kashmiri red chili powder and salt and mix well, then the sugar.
  • dried fenugreek leaves
Crush the kasuri methi in the palm and add it, then the garam masala; stir well and cover five minutes on low heat.
Add the fried tofu, mix, and cover five to seven more minutes on low heat.
Adding the tofu and cream
  • 3 tbsp heavy cream
Uncover, stir, add the heavy cream, mix and cover two more minutes on low heat.
Serve with rice, naan or roti.
