Techniques
- 1 inch cinnamon stick
- 5 cloves garlic
- 1 inch ginger
- 30 g cashew nuts
- 1 tbsp raisins
- 454 g tofu
- 1 whole chopped red bell peppers
- 3 whole portobello mushrooms
- 2 tbsp oil
- 1 whole dry bay leaf
- 5 whole green cardamoms
- 4–5 whole cloves
Heat the oil on medium-high until hot but not smoking; add the bay leaf, cinnamon stick, cracked cardamom pods and cloves.
Whole spices in hot oil
- sliced onions
- salt
Add sliced onions with a sprinkle of salt and fry on medium-low, browning gradually for sweetness; do not add onions to very hot oil.
When the onion edges brown, add garlic and ginger and stir on medium heat two to three minutes.
- 1 whole roughly chopped tomato
- 1 whole green chili
Add the tomato and green chili and stir a few minutes until soft; add the drained soaked cashews and raisins.
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 tsp Kashmiri red chili powder
- 1 tsp turmeric powder
- ½ cup water
Add coriander, cumin, Kashmiri chili powder and turmeric, about half a cup of water, and cover five minutes.
Ground spices and cooking the masala
- 1 cup water
Remove the bay leaf and cinnamon stick; turn out the masala, rinse the pan with a little under a cup of water and add it.
- 2 tbsp oil
Heat 2 tablespoons oil in a non-stick pan and fry the salted tofu in a single layer in batches on medium-high until golden on both sides; do not turn pieces that stick.
Fry the red bell pepper and mushrooms until the mushroom liquid dries up; add a sprinkle of salt and fry a few minutes more.
- ½ cup water
- ½ tsp kasuri methi
- 1 tsp salt
- freshly crushed black pepper
- 1 tsp garam masala powder
Add the masala paste and the blender rinsing water, the tofu, kasuri methi, salt, black pepper and garam masala; thin with water if too thick.
Building the curry
- thick coconut milk
- 1 tsp sugar
Stir in a few tablespoons of thick coconut milk, taste and adjust seasoning, and add a teaspoon of sugar if wanted.
- frozen green peas
Add frozen peas, cover on low three to five minutes; fresh peas go in with the peppers.
