Techniques
- 450 g extra firm tofu
- 1 whole onion
- 25 g ginger
- 20 g garlic
- 2 tsp sugar
Discard the tofu's packing water, rinse briefly, and press out excess water in a tofu press, or wrap in paper towels with a weight on top.
- 2 tbsp oil
- ¼ tsp turmeric powder
- ¼ tsp Kashmiri red chilli powder
Warm about 2 tablespoons oil over medium heat; while just warm, not hot, add the turmeric and Kashmiri chilli powder so they do not burn.
Add the tofu in a single layer in a non-stick pan; turn only when it releases, and fry until lightly browned on both sides. Remove.
Heat 2 tablespoons oil and 2 tablespoons ghee; add the bay leaf and cumin seeds and let them sizzle.
Tempering whole spices and frying onions
- 2 tbsp oil
- 2 tbsp homemade ghee
- 1 whole dry bay leaf
- 1 tsp cumin seeds
- salt
Add the finely chopped onion with a pinch of salt and fry on medium until lightly browned; add the grated ginger and garlic and fry about a minute on medium-low.
- 2 whole tomatoes
Add a little sugar (optional) and cook until the onions are soft and jammy. Add the tomatoes pureed with a little water and cook on medium, stirring, until thick.
- 2 heaped tbsp plain whole milk yogurt
- 2 tbsp gram flour
- 1 tsp Kashmiri chili powder
- 1 tsp sweet paprika
- ½ tsp turmeric powder
- 1 heaped tsp coriander powder
- 1 tsp homemade garam masala powder
- ½ cup water
Mix the yogurt with the gram flour, Kashmiri chili powder, sweet paprika, turmeric, coriander powder, garam masala and half a cup of water; whisk smooth with a wire whisk.
When the oil leaves the sides of the tomatoes, lower the heat and add the yogurt mixture, stirring vigorously and continuously until bubbles appear so the yogurt does not split; then stir frequently until oil surfaces.
Adding the yogurt without splitting
- 1 cup hot water
- 1 tsp sweet paprika
- salt
- 1 cup water
Add a cup of hot water, another teaspoon of sweet paprika and salt; add another cup of water if too thick, remembering the gram flour thickens it as it cools.
- 1 tsp crushed kasuri methi
Add the crushed kasuri methi; cover on low 5 minutes, stirring in between. Taste and adjust seasoning.
Add the fried tofu and mix gently; cover on low 3 minutes. Optional cooking cream or milk for richness.
