Torta with mashed beans, pork, avocado and queso fresco

Simmer onions and garlic in a little oil in a pan.

Open a can of beans, tip off the liquid, add them to the onions and garlic and mash.

Cut the roll in half and scoop out the soft bread inside.

Spread mashed beans across the bottom half; add pork, scooped avocado, queso fresco and a few pickled jalapeno strips.

Spoon roasted tomato salsa on the top half and close.
