Techniques
  • oil
  • ½ whole small white onion
  • 1 whole small red bell pepper
  • 1 whole jalapeño
Heat a frying pan on medium with a little oil. Add half a small white onion, one small red bell pepper and one jalapeño and sauté about five minutes.
  • 1 lb lean ground beef
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp parsley
  • 1 tsp chili powder
  • 1 tsp chili flakes
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • 1 tsp salt
Add one pound of lean ground beef and season with oregano, thyme, parsley, chili powder, chili flakes, garlic powder, onion powder, black pepper and salt.
  • 2 cloves garlic cloves
Break the meat down, add two minced garlic cloves and cook about seven minutes, then taste for salt.
  • ½ cup tomato sauce
  • cilantro
Add half a cup of tomato sauce and cilantro, and cook a couple more minutes.
Finishing the filling
  • 7 whole potatoes
Turn off the filling and set it aside to cool.
Peel the boiled potatoes and smash them down.
  • 1 cup queso cotija
  • chicken bouillon
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ tsp parsley
  • salt
Mix into the potatoes one cup of queso cotija, chicken bouillon, black pepper, garlic powder, onion powder, oregano, parsley and salt until well combined, then taste for salt.
  • 1 tbsp cornstarch
  • 6 tbsp bread crumbs
Mix in one tablespoon of cornstarch and six tablespoons of plain bread crumbs.
Binding the potato dough
  • 2 whole eggs
Add two lightly beaten eggs and combine by hand. The mixture is ready when it all sticks to your fingers; add more bread crumbs if it does not, but do not let it get wet.
  • oil
Heat oil in a Dutch oven on medium heat.
  • cheese
Take about four tablespoons of potato mixture, roll and flatten it, add cheese, press it closed, then roll and flatten again. Repeat until the mixture is gone.
Fry the tortitas until nice and golden, about four minutes, then drain on paper towel.
  • chili oil
Serve on their own or with a side of ensalada de calabacitas.
