Techniques
- 1 slices thick cut bacon
Cut a slice of thick-cut bacon in half and put it on a cold griddle; turn the heat to medium-low and cook slowly so the fat renders and the bacon crisps.
- 2 parts mayo
- 1 parts horseradish
- 1 parts hot sauce
- 1 parts mustard
- 1 parts honey
- garlic powder
Burger sauce: mix two parts mayo with one part each horseradish, hot sauce, mustard and honey, a sprinkle of garlic powder, smoked paprika and seven cranks of black pepper; taste and adjust.
Burger sauce
- smoked paprika
- black pepper
- romaine lettuce
Very finely slice romaine lettuce; gather pickled onions, American cheese and the bun.
- pickled onions
- American cheese
- 1 whole brioche bun
- 6 oz 80-20 ground beef
Weigh 6 ounces of 80-20 ground beef and divide into three loose-packed 2-ounce piles.
Mop up some bacon fat with the buns and toast them on the upper griddle.
Toasting buns and smashing
- salt
Put the beef on the hot griddle, add a pinch of salt and smash straight down for maximum contact; use parchment on top if it sticks.
Let the crust develop 30 to 60 seconds, scrape and flip; add American cheese to two patties at once and after another 20 to 30 seconds stack the meat and cheese tower.
Assemble: bottom bun, burger sauce, shredded lettuce, the bacon, the patty tower, pickled onions, more sauce on the top bun.
