  • 1 whole onion
  • 5 cloves garlic
  • 1 whole green bell pepper
Finely chop the onion and green bell pepper and roughly chop the garlic.
  • 2 can canned tuna in olive oil
Drain the two cans of tuna into a fine sieve set over a bowl, keeping the oil, and gently flake the tuna.
  • 3 tbsp olive oil from the canned tuna
Heat a stock pot on medium and add 3 tablespoons of the oil drained from the tuna.
After a couple of minutes add the chopped vegetables and mix continuously so everything sautes evenly.
  • 2½ g sweet smoked Spanish paprika
  • ½ g dried thyme
After 3 to 4 minutes, once the vegetables are lightly sauteed, add the paprika and the dried thyme and mix quickly to coat.
  • 425 g tomato sauce
  • sea salt
  • freshly cracked black pepper
Add the tomato sauce, season with sea salt and black pepper, mix and simmer a few minutes without stirring.
  • 4 cup vegetable broth
  • 110 g fideo cut spaghetti
After 3 to 4 minutes, once the tomato sauce has slightly thickened, add the vegetable broth, turn to high and mix gently.
Once it boils add the pasta, stirring every 1 to 2 minutes to release the starch and thicken the stew.
Cooking the fideo pasta in the stew
Cook until the pasta is just al dente, 7 minutes in this case; check the package instructions.
Add the drained tuna, turn off the heat and mix once.
  • fresh parsley
Transfer to a serving dish and garnish with fresh parsley.
