Ingredients
Method
Techniques
  • 2 whole large eggs
  • all-purpose white flour
  • cold water
  • salt
  • olive oil
Whisk the eggs, flour, cold water, salt and olive oil very thoroughly to a smooth, thin, lump-free batter like a thin pancake batter.
Cover and refrigerate at least one hour so the flour hydrates.
  • leftover turkey
  • whole milk ricotta cheese
  • 1 whole egg
  • dried marjoram
  • red pepper flakes
  • salt
  • mozzarella cheese
  • finely grated Parmesan
  • fresh chopped Italian parsley
Chop the turkey: no giant chunks, not minced. Mix in a bowl with ricotta, an egg, dried marjoram, red pepper flakes, salt, mozzarella, finely grated Parmesan and chopped parsley; refrigerate if not using soon.
  • olive oil
Brush a nonstick skillet over medium-high heat generously with olive oil, pour in a quarter cup or so of batter and tilt to cover the bottom.
Cook about a minute to a minute and a half per side; the second side gets golden brown dimples. Stack the crepes on a plate.
Cooking the crepes
  • tomato sauce
Put a little tomato sauce in the bottom of a baking dish.
Lay each crepe dimpled side down, spoon on a quarter of the filling, roll up, tucking in the sides if wanted, and place in the dish.
  • Parmesan
  • olive oil
Spoon more sauce mostly down the middle, leaving some crepe exposed to brown; grate over Parmesan and drizzle lightly with olive oil.
Bake in a preheated 350F oven for 45 minutes.
  • fresh Italian parsley
Rest at least 5 minutes; garnish with Parmesan and parsley.
