Techniques
- ground turkey
- chopped garlic
- onions
- rosemary
- thyme
- oregano
- salt
- fresh cracked black pepper
In a large metal mixing bowl combine the ground turkey with chopped garlic and onions (reserving some) and finely chopped rosemary, thyme and oregano; season with salt and black pepper.
- stale bread
- Parmesan cheese
- olive oil
Cut stale bread into small squares and add; mix well by hand, adding Parmesan and a good splash of olive oil.
Roll into meatballs a little smaller than a golf ball and bake at 400F for 20 to 30 minutes depending on colour, optionally under the broiler for the last 5 minutes for char.
Red sauce: in a medium saucepan over medium-high heat with a generous splash of olive oil, fry the reserved garlic and herbs one to two minutes.
- olive oil
- tomato paste
Add tomato paste and cook about two minutes until it starts to stick to the pan.
- red wine
Deglaze with red wine and reduce about 20 minutes on low heat; season with salt and pepper, thin with water if too thick.
- water
- olive oil
- rolls
Add olive oil to the bowl that held the herbs, garlic and onions; brush on the slit rolls and toast under the broiler about two minutes until slightly charred at the edges.
Coat the meatballs in the sauce; put four to five on each roll, top with a few basil leaves and two slices of mozzarella, and broil two minutes more to melt.
