Techniques
  • ½ whole onion
  • 4 cloves garlic
Chop about half an onion; mince four cloves of garlic or use a garlic press.
Preheat the oven to 325F and spray a rimmed baking sheet with cooking spray.
Preheating and cooking the onions
  • cooking spray
  • 2 tbsp olive oil
  • ½ tsp salt
Heat about two tablespoons of olive oil in a medium skillet over medium heat until shimmering; add the onions with half a teaspoon of salt and cook, stirring occasionally, until tender and light brown. If they threaten to burn, add a couple tablespoons of water.
Add the garlic and cook about two minutes, stirring constantly, until fragrant; transfer to a plate or bowl to cool.
Adding the garlic
  • 60 g panko breadcrumbs
  • 120 ml whole milk
Stir one cup (60 g) of panko with half a cup (120 ml) of whole milk in a large bowl and let stand about five minutes to soak.
  • thyme
  • lemon zest
  • 2 whole large eggs
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp cracked pepper
Add thyme and a little lemon zest, two large eggs, two more tablespoons of olive oil, a tablespoon of Worcestershire sauce, a teaspoon of salt and a teaspoon of cracked pepper; break up the eggs and stir.
  • 2 lb ground turkey
Add two pounds of ground turkey and the cooled onions and garlic; mix by hand without compressing until even.
Mixing in the ground turkey
Shape into a loaf on the prepared baking sheet, or press into a sprayed 9 by 5 inch loaf pan and add about 5 to 10 minutes of bake time.
  • 1½ cup ketchup
  • 1 tbsp Worcestershire sauce
Mix one and a half cups of ketchup with one tablespoon of Worcestershire sauce.
The ketchup sauce and first brushing
Pour half a cup of the sauce over the loaf and brush it over the top; cover and reserve the rest.
Bake at 325 for 30 minutes, then brush with half the remaining sauce; reserve the rest to serve.
Rest 15 minutes before cutting so it stays juicy and holds its shape.
