Ingredients
Method
Techniques
- 2 cup all-purpose flour
- salt
- baking powder
- sugar
Whisk the flour, salt, baking powder and sugar together.
- 1½ sticks ice cold butter
Grate in the frozen butter, tossing with a fork every quarter stick or so to coat the shards so they do not stick together.
- pure vanilla extract
- 2 whole large egg yolks
Add the vanilla and egg yolks and mix with a fork a few minutes until the flour absorbs the wet ingredients.
Yolks and vinegar to make it clump
- 1–2 tsp apple cider vinegar
Add the cider vinegar, fork briefly (about 30 seconds), then rub between the fingertips until a squeezed handful holds as a clump; add another teaspoon of vinegar or water if it will not.
- blueberries
- raspberries
- blackberries
- lemon zest
- 2 tsp lemon juice
- sugar
- cornstarch
- cayenne
Just before assembling, mix the blueberries, raspberries and blackberries with lemon zest, lemon juice, a little sugar, cornstarch and a little cayenne.
The berry filling
Press about half the crumble firmly into the baking dish with something flat to form a bottom crust; add the berries and spread evenly.
Assembling the crumble
Top with the rest of the crumble: squeeze handfuls into clumps and break them into irregular pieces of varied sizes.
Bake in the centre of a 375F oven about 45 minutes, until well browned with berry syrup bubbling through.
- vanilla ice cream
- chocolate mint
Cool to warm or room temperature (about half an hour); serve with vanilla ice cream and a sprig of chocolate mint.
